Prunes in sherry

To make prunes in sherry you will need:
1 kg dried prunes
250g sugar
Juice of one lemon
½ teaspoon vanilla essence
4 cloves
4 cups of water
1 bottle medium cream sherry
Steam the prunes for about 15 minutes
In a large saucepan combine the sugar, vanilla, lemon, cloves and water
Bring to the boil, stirring constantly
Simmer uncovered for 15 minutes, then add prunes to the syrup and simmer for another 10 minutes
Use a slotted spoon and scoop pruned from syrup and into 500ml sterilised jars
Fill jars with prunes
Fill jars half with sherry and half with strained cooking syrup
Close jars well and leave to stand for 7-10 days
Wonderful with custard or as an extra to many desserts (and it goes extremely well with roast pork and ham!)

Entre as principais formas de conservação de frutas estão a dessecação e a desidratação. Industrialmente a desidratação é definida como secagem (retirada de água) pelo calor produzido artificialmente sob condições de temperatura, umidade e corrente de ar cuidadosamente controlado. Dessecação tem, em essência, o mesmo significado de desidratação, sendo mais genérico e às vezes usado para se referir a produtos da secagem ao sol. Tanto a desidratação quanto a secagem referem-se a um sistema qualquer de remoção de água por intermédio de um processo que, em geral, segue regras bastante simples.

O processo de dessecação

As ameixas, variedades D’ager 707 e President, especiais para o dessecamento, são colhidas durante o mês de fevereiro e início de março e são colocadas a secar ao sol, conforme fotos. As frutas são colocadas em bandejas, postas a secar ao sol (36° a 37°) durante uma semana, sendo revolvidas diariamente.



Após esse período são lavadas, colocadas novamente em bandejas e conduzidas a um secador para evaporação da umidade.

Em seguida são conduzidas a mesas vibratórias onde trabalham de 4 a 6 mulheres na separação de impurezas, para depois serem lavadas novamente, passadas para uma autoclave (alta temperatura), retiradas da autoclave quando se aguarda para que a temperatura baixe para serem em seguida mergulhadas numa solução de água, glicerina (para conservar a umidade necessária), glicose (para acentuar o sabor) e sorbato (conservante contra a fermentação) , depois do que, finalmente são empacotadas.
