Explanation:
I've been puzzling over this for a long time. My immediate thought was that this must be the tang or shank that goes in a knife handle, and if you're absolutely, totally sure these are handheld knives, that's probably what you should go with.

However, I've directly contacted several Danes including two who work in knifemaking and they say they've never seen this term in their work before. The only other possibility is therefore that the blade in question is not a handheld knife, but rather a blade on an industrial or agricultural machine. Page 942 in the reference below shows such a "kniv" and the corresponding "laske." The "laske" would then be a "plate." There are lots of identical-looking plates online called fish plates, tie plates, backing plates, various straps etc., and also a "blade support plate" with a similar function but a different appearance. I think just "plate" is safest... if I got the context right.

By the way, guess what the metal strap used to attach the shrouds to a mast is called? It's a tang. I wonder....
