I have this term as "officer", but perhaps it is just the "data processor". The document I am working of is a "NOMINA DI ADDETTI PER IL TRATTAMENTO DEI DATI".

UE 2016/679 definisce come addetti "le persone fisiche che sotto la responsabilità di un Titolare o di un Responsabile agiscono accedendo a dati personali".
Nell'ambito di competenza a lei assegnato nella Nomina dal Titolare o dal Responsabile, vengono sotto riportate le istruzioni a cui è tenuto ad attenersi nel trattamento di dati personali, in conformità alle normative vigenti sulla Privacy.

Both terms have been about for years and pre-date GDPR which uses the definition rather than either term

Altro obbligo per il responsabile (art. 29) è provvedere all'addestramento di "... chiunque agisca sotto la sua autorità o sotto quella del titolare del trattamento..." (in pratica gli incaricati). Ovviamente, il titolare deve dimostrare di aver provveduto alla formazione.

neutral  Lara Barnett: I find this term a little outdated, at least for UK use anyway., i.e. the term "operator" has always been used for manual or physical tasks, (e.g. phone operator). Everything is done through computers nowadays, i.e. deskwork implies administration..
