It appears that you can classify mills either by wheel orientation or by where the mills are located. A molino de canal is a mill that diverts the water from the river into a mill race where the water then turns the wheels.

En el (molino) de canal, se construía un caz o canal para desviar a través de él la corriente del río. Al principio del canal se podía disponer de una zona de embalse y mediante un sistema de compuertas permitir el acceso del agua al caz. La compuerta también permitía regular el caudal que entraba al canal. El final del canal descargaba al cárcavo o espacio situado bajo el molino, donde se encontraba el rodezno que recibía el chorro de agua y hacía girar toda la maquinaria.

I do realise the watermill (with mill race) is not particularly elegant and I might be tempted just to use watermill, depending on the type of document you are translating.

Hydraulic Mill


Explanation:
This is the more technical term to describe a mill that runs by channeling water to the waterwheel which then turns the grinding stone. The water then gets diverted back to its original path. You could also say watermill, but I believe hydraulic mill is much more specific.
