cannot find any specific references to "testo" or "testi" online in the context of ancient pottery...any ideas?

Originariamente la parola latina testum indicava un vaso o pentola di terracotta, ma anche il coperchio della stessa, che riempito di brace veniva usato per cuocere, anche da sopra. In associazione con la "tegula" anch'essa di terracotta, che indicava una teglia ma anche una vera e propria tegola da tetto usata per cuocere alla brace. Il termine si mantenne poi anche per l'utensile odierno[1].

according to Italian dictionaries testo is like teglia and usually refers to low rise terracotta baking dishes or pans (often with two small handles) which may be used both on the fire (later on the stove top) and on the table -like casseroles. Also have a lid which may be loaded with burning coals in order to cook the food from the top

Originariamente la parola latina testum indicava un vaso o pentola di terracotta, ma anche il coperchio della stessa, che riempito di brace veniva usato per cuocere, anche da sopra. In associazione con la "tegula" anch'essa di terracotta, che indicava una teglia ma anche una vera e propria tegola da tetto usata per cuocere alla brace.

I was writing a similar answer to my Daniela at the same time. However I would go for a GENERIC term rather than griddle as this in English is usually completely flat
