Como dizer isso de maneira sucinta e precisa? O Linguee dá "crocante", mas não é essa a ideia, já que os legumes estão sendo apenas refogados.

Hier der gesamte Link, der auch Gemüse einschließt: Al dente é um expressão italiana que descreve o ponto satisfatório de cozimento da massa, ou arroz ou legumes que, ao ser servida, deve resistir ligeiramente à pressão dos dentes. Digamos que, a massa está cozida, mas não mole. Esse ponto acontece logo depois de a farinha cozinhar até o meio de cada pedaço ou fio de massa que, deve ser cozida até este ponto, não mais nem menos.
