I wonder if anyone has come across this term? It occurs in a document promoting carbon neutrality - I think given the context it isn't a typo for seigneur but rather relates to the need to reduce meat consumption. I understand 'saigneur' is a 'sticker' - ie someone who slaughters animals for food?

this sounds more like a conflict between a vegetarian and someone "letting blood" i.e. eating meat obtained by slaughter.

I think you have your mind made up but why not throw in another guess.

There is a play on words between "seigneur" (The Last Supper) and "saigneur."

*A meal which includes meat is a sacrificial meal*. ... so that no need for the eating of flesh had to be met, and a vegetarian diet could satisfy both men and beasts.
