Il mio preferito. Cugino stretto del fish and chips: c’è il fish, non ci sono le chips.
Semplicissimo: merluzzo impastellato e fritto, servito con salsine simil-maionese (all’aglio, al whisky e la più classica tartara). L’omino che frigge kibbeling è comune in tutti i mercati, ma ci sono anche bar e caffè che lo preparano. Esigetelo bello caldo: in diversi test la qualità della frittura è risultata sempre ottima, incredibilmente poco unta e croccantosa.
Il kibbeling è tradizionalmente a base di merluzzo, anche se a causa dell’alto prezzo raggiunto dalla materia prima se ne trovano con merlano, nasello e soprattutto merluzzo giallo e merluzzo carbonaro (il pollack). La parola è una corruzione dell’antico olandese e indica per l’appunto le guance di merluzzo, un tempo considerate scarti."
