Es geht um eine kurze Beschreibung eines Eisherstellers und er richtet sich damit an Großkunden, also Caterer, Großküchen etc. Das Eis wird wie folgt beschrieben:

"Sans arômes artificiels, sans colorants artificiels, sans émulsifiants
Un faible ***taux de foisonnement*** pour plus de matière en bouche et un goût intense."

Was ist der "Taux de foisonnement"? Im Glossar gibt es eine Antwort - Schwellzahl - die sich aber in Google nicht belegen lässt.
