When you trim the pastry you still want a bit of an overhang. Just enough to tuck under a bit so that when you flute the edges of the pie crust you’ve got a double thickness to work with.

Secondo me vuol dire che, al momento di piegare i bordi dell'impasto, bisogna lasciare un po' di bordo in eccesso per poterlo poi piegare sulla torta e avere in questo modo un doppio spessore o strato.
