We knew we needed a project that would help our students develop a more realistic view of the food system while teaching important concepts of sustainability, permaculture, and systems thinking.

Pondría esto en la primera ocurrencia porque lo diría así.
Me parece que en este caso vale desmembrarlo. Es un concepto que implica pensar los alimentos en un contexto integral y dinámico.

En la segunda ocurrencia (la última oración) tal vez usaría simplemente
"... conceptos de sustentabilidad, permacultura y sistemas".
