Posto che sarei d'accordo con Maria Cristina per "residuo d'ordine", propongo questa alternativa. In realtà non sappiamo esattamente se stiamo parlando di ordine evaso parzialmente per mancanza di qualche prodotto, quindi andrebbe bene residuo, oppure di un ordine che non può essere evaso del tutto. Nel dubbio, direi che ordine sospeso potrebbe andar bene per entrambi.
