To start with, it is comparatively unusual to have anything ON TOP OF crumble — risks not staying very 'crumbly'! 'tout citron' often implies that more than one component contains lemon — so it might be a bavarois and a cream, or a jelly, for example; but it's really impossible to guess! I suspect perhaps the 'crumble' is some kind of biscuit crumb base — I'm wondering if this is some kind of cheesecake, with a lemony cream and then a lemon topping? The 'suzette' might be an already-flambéed pancake; could even perhaps be some kind of crispy biscuit thing, often used to accompany a 'squishy' dessert! Then again, I suppose it is conceivable that a 'suzette' on its own has some other significance.
