It doesn't matter what the internet throws at us when it comes to vows. What counts is that in the context of the CV generalizing vows will not necessarily mean that the man is a priest. There are several vows a man makes before reaching the level of priesthood. So how will the reader be able to determine that he is in fact a priest unless it is specified that he did complete the ordination process? This is not a telegram it is a CV and if it says he was ordained as a priest then it should be translated as such. There are times when a word is not superfluous and this is one of those times.
Many others take vows: monks, "brothers", etc. and they are not priests!

Of course there are a number of ordinations in the religious world (and not just those you and I might have uppermost in mind). But, in the context of one person's CV it will be utterly and inequivocably evident which religion (s)he belongs to.

I totally disagree with your comment that "priestly" is understood. There's rabbinical ordination too, so it is vital to specify what kind of ordination the man is having.
