W całości:
The bar/restaurant etc. stays/remains/is open until the last customer leaves.

Jest też w sieci wersja "until the last customer is served" - ale nie polecam, bo brzmi to tak, jakby ten ostatni klient musiał wyjść natychmiast po obsłużeniu (a raczej nie o to chodzi).

Jeśli bar jest mocno "trunkowy", a właściciel i klienci mają poczucie humoru, można dać "until the last customer staggers out" - na taką wersję zdecydowali się - któżby inny?;-) Rosjanie: www.proz.com/kudoz/3185957

agree  Darius Saczuk: W USA patron bardzo powszechnie stosowane obok customer.

agree  Wojciech Szczerek: rozumiem, że lokal to bar/restauracja/knajpa. Bo jak sklep, to może być też "until the last customer has been served".
