La plante ressemble au topinambour et ce sont aussi les racines qui sont appréciées. Les rhizomes se consomment au jus, en gratin ou en vinaigrette. L’hélianti se cultive en annuelle en plantant des rhizomes car les fleurs ne produisent pas de graines.

Explanation:
Se trata de una especie de girasol.

Parece ser que en los países de habla hispana no es muy conocido porque no consigo encontrar un equivalente en español. En inglés sería "pale-leaved sunflower" o "pale-leaved woodland sunflower".

El nombre científico de lo que en francés se llama hélianti o hélianthe scrofuleux es Helianthus strumosus y en español se llama helianto estrumoso según figura en el libro
