This sentence appears on each of the multiple Anweisungen that I have received for translation and the Anweisungen related to electronic goods.

I dont seem to find the right term for Standdokument and Laufdokument.

Any ideas?

Laufdokumente could also have been "progress documents" but that would have duplicated the meaning of status reports to some extent.

Explanation:
Stand in technical terms is usually the status so status documents, i.e. documents that log the status of whatever process is ongoing.

Lauf I would see here as the circulating status, i.e. documents passing through various stages of the process. see link below.

Explanation:
There probably is a better way of expressing the idea; but "Laufdokumente" are those "die im Lauf gehalten warden" e.g. they are continuously updated. Standdokumente, on the other hand, are those "die den gewissen Stand an einem gewissen Tag reflektieren", thus showing the "status" of the document. So, lit. also "Current and Continuously Updated" documents.

Explanation:

In a possible context of business processes, however, I would tend to label the two kinds of documents "status reports" and "dynamic documents".

Google "static and dynamic documents" for context beyond the two web references given here.

General observation:
From what I have noticed (i.e. not researched here) "dynamic documents" is a new term, whereas "static documents" is struggling to gain ground, because of the frequency of the previously adequate terms "status reports", and "status updates", the latter one causing some problems when people try to decide at what particular point a "status update" becomes an addition or modification of what, in effect, is a "dynamic document". We may well see the gradual disappearance of "status updates" in the near future.
