blue denim
Blå denim

Explanation:
It's the same word in Danish. Denim is originally a colour (from Nimes, "de Nimes") and it now refers to the material used for jeans. As jeans can be other colours, "blue" is often added for clarity.

P.S. It is true that nowadays, denim comes in many different colours, but this does not imply that anyone would be in doubt whether 'cowboystof' is actually blue or not. On the contrary. You would only have to state a colour if it was NOT blue.

agree  Pernille Kienle: When I lived in Denmark, most people would definitely use 'cowboystof', but that could have changed, of course.

-> Thanks Pernille. Considering that a pair of blue denim trousers would usually be called 'cowboybukser', I think it is safe to say that 'cowboystof' is still the most commonly used word for the actual fabric.

neutral  Pernille Chapman: This is no doubt the original Danish term for this material, but most fashion companies/interior designers nowadays would call it denim.
