More about the author's childhood in Taft, Yazd.

Here's the sentence:
ناهار آبگوشت دیزی بود که از صبح آن‌را باصطلاح «بار» می‌کردند و ظهر همه با هم با لذّت فراوان می‌خوردیم.

As you can see, the word بار is in inverted commas. I wonder if this is because the word is seen as dialect.

It's not an old expression and it's widely used even in mega-cities like Tehran. We use it for کله‌پاچه and آب‌گوشت and some other foods.
I think it's used for meals which need gradual and long-time boiling. So poach could be closer choice.
