This is taken from an operating procedure for use in a large, French food (chain) store. It's to do with organising and laying out the stock in a newly opened store. I am trying to get the sense of 'produits en tension' in this context. It's packets of frozen foods being referred to here, nothing to do with electricity...!

Any ideas?

It was a combination of Matt's fast-selling" idea and my short-supply" which finally gave rise to this new suggestion.

A product may sell quickly and that creates a high demand. The tension arises there.

Think about it: stamp collecting and golf are extremely popular with thousands of people all over the world who collectively spend millions on them each year. Yet gold and stamp collecting are not in eBay’s Top 10 searches!

What we are trying to say is that niche markets are where you should be focusing.

To find them, start paying attention to newspaper headlines, magazine topics and new product releases. An article on smokers struggling to quit their habit, faux fur as an emerging fashion trend, new technology for improving golf swings – it’s all useful market information.

eBay itself has some useful market information in eBay Pulse and the Seller Central area. Visit there frequently to see what categories are doing well. Another idea is to see how many items are listed in each category and hone in on ones that have good sales and low product numbers. Just click Search on the eBay home page leaving the keyword area blank and All Categories selected. You’ll now be able to see how many listings are in each category. Click on a category, and to the left in the yellow box, you’ll be able to see numbers for the subcategories as well.

neutral  Nikki Scott-Despaigne: Rather than "fast"selling" perhaps "products in high-demand". The fact they sell fast gives rise to the "tension" which is a result of their being in high demand.

  -> I don't agree, Nikki. I think "fast-selling" is the best word here in this context. Is "high demand" wrong? No, but it's not really the common term used in marketing to describe frozen foods that sell quickly because of high demand. Close but no bouquet!

Explanation:
There must be an official term for this! I was going to say 'short-dated products', but that really describes simply ones that are nearing the end of their shelf-life (which might initially have been quite long).

I believe, like the discussion entries above, that this is the same use of 'tension' as in 'flux tendu' — but maybe for a different reason.

In the logic of things, I think they are simply saying that they can't stock too much of products that only have a short shelf-life — like bags of salad, for example.

However, if this really is to do with FROZEN food, my argument doesn't really hold up, inasmuch as most frozen food does have a reasonably long date anyway — but maybe the shorter ones are still a bit 'tight' for a store.

If you think about it, if these were products that move quickly, it wouldn't make a lot of sense to forbid ordering larger quantities; on the contrary, in fact! Unless it does of course mean 'products that are available from JIT suppliers' — i.e. ones that can be ordered and delivered very quickly, at the last minute.
