German term or phrase: Die Spätzle abseihen, abschwemmen
I thought "abseihen" was to sieve or filter but it would make more sense here if it just meant "drain the spaetzle in a colander", I think. I can't find "abschwemmen" in my dictionary, but I assme that means something drain, too.

rinse
Explanation:
...I think you got it concerning the drainage.

"abschwemmen" means to quensch (you may use this expression as well) the Spätzle, in order to avoid becoming cloddy...

Bon Apétit, William!

Thanks, Harald (and the others). You're right in thinking that "abschwemmen" was what I was missing.

agree  Kim Metzger: According to Muret-Sanders, abschwemmen is rinse. Would that work?

drain

Explanation:
Drain is OK, or lift with slotted spoon. Both ways can be used. I often cook it.
