The menu I'm translating is in Catalan but the phrase is similar in Spanish. At the moment I'm thinking of using 'Chef's amuse-bouche' but would welcome other suggestions.

Chef's muse

Explanation:
or the more mundane, but eminently safe "Chef's special", depending on what actually constitutes the Entreteniment. Is it necessarily canapé-type food? Might it not be something else? It doesn't google in either Catalan or Castillano, as one would expect of a standard dish. I almost invariably refer back to the Chef whenever this occurs (almost every time I have an exotic menu to translate!), but here's just one possibility:

7 Jun 2007 – Chef's Muse: $75 ... Not wanting to waste another moment, I went straight for the " Chef's Muse" — a tasting menu of plate after plate after plate of simply prepped and presented sea creatures, all cracked, shucked, boiled, steamed and slaughtered for my gluttonous pleasure. At seventy-five bucks a pop, it was expensive but seemed worth it.

Try starting your meal with an amuse-bouche (chef’s teaser). These small dishes are a great way to prepare your palette for the meal ahead.

Amuse-bouche (Chef's Special)

Explanation:
Another possibility is
"Amuse-bouche (Chef's Special of the Day)"
or even, to keep with the French 'theme'
"Amuse-bouche du Jour" or some such.

Of course, mentioning the Chef gives it a higher standing!

The only reason for the amuse-bouche not to be specifiedin the menu is so that the Chef can improvise on the day (using up whatever they have handy), although it is also true that a certain element of surprise is often valued and included in "Tasting Menus"...
