Спасибо! Написал: "нож для замеса теста". ИМХО, фраза "для рубки теста" подразумевает, что рубят уже готовое тесто, а у нас всё-таки пока еще масло и мука.

Margarita Taschian: нож для рубки теста - хороший вариант. это именно нож, только полукруглый и с несколькими лезвиями) с его помощью проще делать например быстрое слоеное тесто - нарубить холодное масло и смешать с мукой.
