Se trata de un texto sobre anchoas saladas. Cuando mencionan el proceso de elaboración figura lo siguiente:
Vaciado de tambores:
Los tambores son volcados sobre tarimas plásticas a una altura considerable para que las anchoas saladas caigan sobre una mesa de acero inoxidable.
Un operario irá desarmando los puños de piezas que se encuentren adheridas y luego las dispondrá en cunitas plásticas. Las cunitas plásticas se apilaran sobre un carro de acero inoxidable para luego ser transportadas hacia los puestos de trabajo

I must admit I haven't found this use of "puño" defined anywhere, so I am guessing, but I think the context makes it clear that it refers to clumps of anchovy fillets that have stuck together during curing and have to be separated. "Puño" can mean a handful, as a measure, but I don't think that's the sense of it here.

I don't think "pieces" works for "piezas". You could say "fish" or "anchovies" or "fillets", but really it could just be omitted; it will be obvious what they are clumps of.

agree  Simon Bruni: I think that's the idea. Salted anchovies do have a tendency to clump together. You could also perhaps say "cluster" or "bunch"
