Main course on a restaurant fixed-price menu. In the past I've translated volaille du Gers as Gascon chicken, but would it be accurate to perhaps call this "free-range chicken supreme"? Gascon chicken supreme or variations doesn't come up with any ghits.

disagree  Nicky Over: I would have thought that Chicken Supreme tends to be a dish of chicken breasts in white sauce, rather than the cut of chicken. -- Answering you, the majority of Google hits for "Chicken supreme" are for the dish, not the cut - on Eng or Fr websites.
