This is from a gourmet restaurant menu. It accompanies marinated salmon

transparence d'avocat concombre poivré.

As there is no punctuation I'm wondering if the transparence is actually of both avocado and peppered cucumber - but the term I am struggling with is transparence. I imagine it to be some kind of translucent sauce, but have not encountered it before.

Asker: Thanks Niki - In the end I went with glaze because of the picture of the dish in my head. Thanks writeaway for your comment - I just see a virtually transparent topping as being more of a glaze - that's the way my logic works.

So in my mind a 'transparence' is basically a sauce. In this kind of context sauce does not have the right register so the whole dish might be described as 'Marinated salmon with an avocado and peppered cucumber dressing'.

It sounds very nice indeed.

Looking through some other recipes it just seems to mean blended.

Many of the recipies I have looked through contain avocado.

The dressing suggestion should still work, but I might consider puree to be more suitable. Or maybe 'Marinated salmon topped with a blend of avocado and peppered cucumber'?

The same thing can be described in many ways.
