Perhaps it would be best translated as 'stars', as this would be understood by a British reader, but add an explanation about the classification system? Or maybe leave it in the original with an explanation?

Rather than getting into some literal translation, which could only make sense with a strong and rather heavy explanation, I suggest to go straight at the outcome: "top class", with some further explanation through a footnote.

agree  Philippa Smith: I like your idea of avoiding the literal; however, the gîtes de France link shows that there are 5 épis, so 3 is not the highest level; it should maybe be rendered with "good quality self-catering accommodation" instead (and not all gîtes are cottages)
