Szűk ezer évvel ezelőtt bencés szerzetesek telepítették az első fákat Taggia környékén (San Remo és Nizza között helyezkedik el a francia határhoz közel), ezért viseli a leggyakoribb olívafajta a Taggiasca nevet. Ízében lágy és gyümölcsös, nincs meg az a markáns fűíze, színe pedig világosabb, mint az ismert toszkán olívaolajak. Azt mondják, a tengerparton nyugatnak, vagyis a francia határnak menve egyre finomabb, elegánsabb lesz az olaj, ami sokak szerint a mérsékelt és csapadékszegény időjárással függ össze. A ligúr olívaolaj 1997-ben az EU által megkapta a minőséget is alátámasztó eredetvédettséget (DOC).
