I am unable to understand translation of term "gruyérisation" in the following segment. I assume it should be buffering.

La granulométrie associée à ce buffer permet une gestion mémoire optimisée sans "gruyérisation".

neutral  Neil Coffey: This is a nice graphic description, but it's obviously not a usual term, whereas I think "gruyérisation" is genuiney used in programming so I´d be tempted to stick to the actual term.

The usual, neutral term would be "fragmentation". Admittedly, "gruyérisation" is a bit more informal, but I would be tempted to stick with the usual term.
