(2010-07-09 14:34:22 GMT) -------------------------------------------------- Mousseline ist eine Schaummasse. Ich habe schon unterschiedlichste Übersetzungsvorschläge gefunden: Schaum, Terrine, mein Lexikon der Küche spricht von Schaumbrötchen. Siehe dazu auch http://de.wikipedia.org/wiki/Schaumbrot. Mir gefällt aber die Beibehaltung des französischen Begriffs am besten. Evtl. auch mit Bindestrich Hecht-Mousseline. Die Nappierung mit einer Sauce aus Krebsschwänzen ist klassisch. |
