I am translating a tender for the opening of a new restaurant. This section discusses the staff that are required. I do not understand the significance on the '65%'. Further in the document, the company states that the total workforce will be X%. I understand the 'salaire de base' to be the base wage, i.e. before tips. Thanks in advance for your help!

Hello,

Could a "service" be a "waitor" here? I don't know what else it would be referring to. "Service + cuisine" would be "waiting tables and doing kitchen work" (cooking, clean-up, etc.) And "responsable" would be "manager"?

I think that the waitor gets 65% take-home pay after taxes based on a base salary of 3.000 euros.
