Auf jeder Speisekarte in Wirtshäusern finden sich Brotzeiten (woanders Jausen, Vesper, usw.). Hauptbestandteile sind häufig selbstgemachte Wurst, wie Göttinger oder roter und weißer Pressack. Beim Käse gibt es oft "Backstakäs" (Limburger) oder "Ziebeleskäs" (angemachter Quark) auch als "Weißer Käs" oder auch noch anders bezeichnet. Wichtiger Bestandteil ist der Schinken, oft als Geräucherte, Schwarzfleisch, oder in der Bamberger Gegend als "Zwetschgenbammes" bezeichnet. Beilage zur Brotzeit ist Brot, am besten selbstgebacken.

Explanation:
A rather generic term, but definitely covers the kind of meat it is. The German name could also be used as for region specific food that's quite common (but you might want to include an explanation in parentheses in that case)

I would call it "jerky" if it weren't for the fact that jerky is always spiced/marinated.
Definitely not "ham" as it's not pork, but beef!

As others have answered, this is dried beef smoked over plum wood. I saw a comment mentioning "marinated in plums", but from what I have been told in Bamberg, Germany, the beef is not marinated in plums but smoked using plum wood.
