I am translating an audit report and I do not understand 'gammes' in this context:

Y a-t-il des gammes de fabrication et sont-elles gérées ?

S’assurer que les gammes sont bien gérées en cas de modification
Adéquation entre gammes et définition du produit par le client

Could this be referring to services?

Explanation:
The Ernst "Dictionnaire général de la technique industrielle" gives "sequence of operations" in this context. However, page 1074 of my manufacturing textbook (DeGarmo, Black, Kohser - 7th Edition) has an illustration of what is called an "operation sheet", with a sequence of operations on it.

Same page: "The route sheet provides routing (travel) information, telling the material handler which machine in which department the parts must go to next. The operations sheet describes what machining or assembly operations are done to the parts at the particular machines." Following the illustrated examples given, it can be seen that a route sheet basically contains less detail than an operations sheet, which has extra columns for cutting speed, feed, depth of cut etc.
