As a vegetarian, I can only guess, but I think meat eaters refer to chunks of dead cow this way.

The "appétits" are aromatic herbs, sometimes also spices, stimulating the appetite such as chive, shallot, garlic, rosemary, oregano, savory, etc. Here I copy the definition given by the Grand Robert : "b Par métonymie. (xviie). Cuis. | Les appétits : herbes aromatiques et apéritives. | La ciboule, la ciboulette, la civette, l'oignon sont des appétits.
18.1 Au xviie siècle, on entendait dans les rues de Paris le refrain du marchand d'herbes : Je vends oignons et échalotes / Que l'on crie bons appétits.

For "appétits", Harraps gives: (a) appetisers, seasoning; (b) chives.
This appears to be backed up by the following link:
