não tenho certeza se é o nome de um prato, mas me parece ser (por analogia a "apple crisp"). A frase (num livro de ficção) é a seguinte:

"... there were men and women with hair curled tight as bramble-crisp, and these people had never performed any kind of magic."

Parece ser uma alusão ao espinho recurvado deste gênero de planta, tipo framboesa. Veja o que diz a Wikipedia sobre brambles:

"Many types of brambles bear edible fruit, and many have recurved thorns that dig into clothing and flesh when the victim tries to pull away from them. Some types also have hair-like thorns"

E veja a 6ª definição para crisp como adjective no answers.com:

"Having small curls, waves, or ripples"

Como exatamente "frasear" a coisa, é outra questão. Mas parece que "encaracolado como espinho de framboesa" não é mal.

Explanation:
Last time I was in England in autumn I had to laugh at some Chinese students watching me pick blackberries along the path to Uni. They called their friends and to try some too. The delicious fruit grows wild on brambles. I warned them to be careful with the thorns, and that the juice stains terribly. Often mixed with apples in desserts.
