Scabbard fish are deep-water fish that look rather menacing, but are extremely tasty. They're also easy to use, because their skins don't have scales -- all you need to do is wipe the skin with a soft cloth, and it's ready.

  -> Yes, I thought sandre seemed more likely, I wasn't aware that sabre is now available in supermarkets...I guess these more unusual species are going to start cropping up now that we have overfished all the others

agree  Tony M: I think 'sandre' is a more likely fish to find in a restaurant, but I agree that one shouldn't start out by assuming a typo... / Well, I'm afraid it seems to need repeating often! People seem to feel the need to change S/T to shoe-horn it into their ideas

I looked this up the other day in order to cook some, after having bought it because it looked good. It is definitely nothing like "sandre". It's one of the deep sea fish now being exploited because the fish at more traditional depths have been fished nearly to extinction. That said, it really is rather good to eat.
