French term or phrase: fraises en cristalline frappé
The French chef who created this dessert thinks the term "en cristalline frappé" should not be translated -- or at least not by "in a chilled cristalline emulison" -- he doesn't like the word emulsion... but "Strawberries 'en cristalline frappé' seems inadequate to me. Your thoughts?

I realise that this is simply substituting an Italian word, but it is more familiar to English readers. As there is no egg in a granita, I thought it legitimate to indicate this in the title

Asker: Thank you for your suggestion, but I belive that the emulsion in this case is not a frozen, granular ice -- like a granita -- but instead, a chilled, foamy sauce. But I appreciate your having given this a lot of thought. Thanks!
