viande à sauter Explanation: Kurzbratfleisch = Bezeichnung für Fleischteile, die zum Kurzbraten (Pfanne, Platte) oder Grillen geeignet sind. Entscheidend ist ein geringer Gehalt an Bindegewebe. Kurzbraten ist ein Bratvorgang beidem das Bratgut (z.B. Fleisch) unter hoher Hitze in einer Pfanne mit schmalem Rand kurz gebraten wird.
