Zum Schwefeln wurde und wird elementarer Schwefel (aus Schwefelblüte) oberhalb der Flüssigkeitssäule eines Weinfasses verbrannt. Es bildet sich dabei Schwefeldioxid.


Dieses Schwefeldioxid löst sich teilweise im Wein als Schweflige Säure, steht aber immer in einem Gleichgewicht mit freiem Schwefeldioxid (sogenannter Freier Schwefel).

disagree  carlonesler (X): casomai 'biossido di zolfo libero', ma in italiano si usa poco. In ogni caso si parla di solfiti, non di zolfo elementare. Il tedesco 'Schwefel' è 'umgangssprachlich', non da prendere alla lettera, per 'SChwefeldioxid'.

  -> ok ma se in un testo scientifico leggo Schwefel traduco con zolfo. Nelmio testosi parlavadibiossido,mancava comunque in concetto di libero che credo sia importante.

agree  carlonesler (X): si, anche 'anidride solforosa' è la stessa cosa, comunque oggi il diossido di zolfo vine eggiunto comodamente in forma gassosa... dalla bombole. ciao :-) allora direi anidride solforosa libera/totale vd. http://www.demetralab.it/demetra5.htm#04
