Acho que o sentido de "plateau" aqui é o sujeito atingir um certo nível de treino e permanecer nele por algum tempo, por exemplo fazer X flexões, saltar ou correr Y metros, nadar 100 m em Z segundos. O seu seja-lá-o-que-for ajuda a romper ou sair de um nível desses para buscar algo maior.
