We have some very elaborate dictionaries in our home - my wife being French - but there is no direct reference to this word. I can only surmise that it means bubbly, in connection with Champagne.

j'exclus le sens argotique de bulle
transformer en bulle : idée de légèreté, ébriété aussi, de vide peut-être, de plaisir éphémère
bubblizing qui correspondrait à cette construction respecterait le choix poétique de l'auteur (Rq personnelle je trouve ces deux mots également laids)

Explanation:
It seems more natural to transpose the words - imagine "champagne fizzing/sparkling in the glass...", and "fizzing" also has the advantage of being onomatopoeic, if that helps!
