A Mezőgazdasági kislexikon szerint három kategóriába sorolják a sikért a belőle (helyesebben vele) készített tészta nyújthatósága alapján. Kis terülésű, közepes terülésű és nagy terülésű. Az angol nyelvű adatok viszont két módszerrel mérik és egyszerűen gluten-index value néven emlegetik. extension of wet gluten Explanation: "MSZ 6367-12:1987 Extension of wet gluten MM/H 1.0" ezt egy SGS Ellenörzési jegyzőkönyvből vettem, magyar megfelelője "sikérterülés". Korábban egy gabona export cégnél dolgoztam, biztos, hogy ez a jó válasz. |
