Opto per questa soluzione perchè credo che questo "haze" sia qualcosa di chiaramente visibile mentre i fumi alcolici non credo lo siano molto ... ma grazie a tutte per la collaborazione.

Penso che avrebbero detto turbidity o cloudiness. Dalla mia esperienza so per certo che se sottoposto a surriscaldamento il vino rilascia vapori alcolici. Però potrebbe anche essere, magari il contesto successivo aiuta a capire meglio.
