El T-bone es un corte específico que existe por ejemplo en EEUU, pero al fin y al cabo es un bistec (o un bife como decimos en Argentina, por ejemplo tenemos el bife de lomo, bife de chorizo, bife de costilla, etc. dependiendo del corte, no?).

Explanation:
En el caso de España y de otros países (doy ejemplos después), son "chuletas de cordero", o sea, el resultado de cortar el espinazo del cordero longitudinalmente para partirlo en dos mitades, y luego cortar transversalmente de forma que la carne del lomo y la falda del cordero quedan adheridos a la costilla.

En el caso del "t-bone" en particular, es realmente lo que en España llamamos "chuletas de riñonada", o sea, obtenidas de la parte lumbar del animal, cerca de los riñones.
