I guess they roast all the carcasses left over from the confit. Can anyone improve on "Carcass Evenings"?
The idea is to make it sound like a delightful local custom, rather than some sort of satanic ritual.

Are you sure it's not Carcassès, which is an area around Carcassonne? It could be soirées Carcassès, like soirées bretonnes etc. Just a thought.
