Source text is a technical article aimed at middle school children, an adaptation of a scientific journal article. In this context "volatile" is a noun, and is usually used in the plural, "volatiles." It refers to fragrances produced by plants which evaporate when exposed to air.
Here is more, in context:
"...Think about the fragrances of flowers and newly mown grass. Scientists call these fragrances *****volatiles*****. They are released when a chemical
inside the plant is exposed to air... Many plants have *****volatiles***** that humans cannot smell. Insects, however, can smell many of these *****volatiles*****. Most insects smell *****volatiles***** using special cells on the surface of their antennae...."

It would seem this usage of the word "volatile" is, in effect, a neologism, and thus I am suspecting there may not be an exact Spanish equivalent. My google searching revealed "substancia vólatil" and "aceite vólatil" but I want to be sure before adopting any particular term...

Yo me quedaría con tu opción de "aceites volátiles", eso sí... habría que acomodar toda la frase.

Ejemplo:

"....El aroma de las plantas y, en particular el que despiden las flores, tiene por origen aceites de este tipo. Los aceites esenciales son químicamente diferentes de los grasos y de los minerales. Se les llama volátiles por que se evaporan y así comunican al aire el olor de su esencia. Se obtienen de diversas plantas, de las cuales derivan sus respectivos nombres. Se utilizan en la fabricación de perfumes y de sustancias para dar sabor a productos alimenticios..."

En todo caso, creo que sustancias, componentes y aceites volátiles son tres opciones de las que podés escoger sin problema... sin embargo, te sugiero "aceites" porque me parece que en este contexto funciona mejor.
