Man unterscheidet biologische Lockerungsmittel wie Backhefe und Sauerteig und chemische wie Backpulver, Pottasche und Hirschhornsalz. Richtig schön locker wird ein Teig aber auch, wenn man ihn lange genug knetet, rührt oder schlägt, das Mehl siebt oder Eischnee zugibt.
