In the film/video industry, "realizador" is usually the director. In case it is the broader sense, I'd suggest "produção" as the course seems to deal with the practical aspects of it. "Creation" is usually more related to the overall concept than the "realization" itself.

I wouldn't say design fits. It's a Design AND Multimedia degree that has one course in Audio/Video practice.

Although I have never heard of "Video Design" there is the "Sound Designer" which is usually the highest rank a sound engineer can obtain.

I agree with you that "produção" and "realização" are different things on a professional level. In a student environment, however, most students "produce" (if there is any serious production management at all) the films they direct themselves.

That's why I mentioned both, because while "directing" seems more apropriate, "production" has a broader sense that surely encompasses the technical aspects of videomaking.
