My mind's gone blank despite/because of a fast approaching deadline. These are the kind of sandwiches made on the spot in front of the customer in accordance with their exact order, in my context in a company canteen. All I can think of is 'freshly made sandwiches', but I'm not sure if that covers it... or does it? Is there another way of putting it?

Hyphens are absolutely vital here, regardless of geography or register, but Marian was still first with the answer, so I'm sending the points in her direction, while affirming my absolute support for the grammar pedants in the other camp.
