Explanation:
Credo (ma è proprio solo una supposizione, non ho trovato riscontri) che s.t. stia per "sul totale", nel senso che ci sarebbe il 31,2% di frutti di bosco nella confettura. Se fosse così pensavo che in spagnolo potrebbe essere sobre el total (forse abbreviato anche lì con s.t.?)
ribadisco però che è solo un'ipotesi.

Explanation:
Potrebbe essere sbagliata la sigla oppure la "s" riferirsi a "sugar". Ho pensato anche a "saccarosio" ma non credo che questo dato venga indicato sull'etichetta. Dai un'occhiata a questi due link, sono interessanti (specialmente il secondo) e forse ti viene qualche idea. Ho anche guardato su 5 barattoli di marmellata che ho a casa e la percentuale corrisponde sempre alla quantità di frutta o di SUCCO di frutta nella confettura. Mi dispiace non poterti aiutare di più...
